Attenuate: From Weakening to Fermentation
In everyday speech, to attenuate means to thin or weaken. In the brewery, it describes the moment yeast turns sugar into alcohol.
To attenuate in common English means to make something thinner, weaker, or less intense. A signal attenuates as it travels. A sound attenuates through distance. A fabric attenuates under strain. The word comes from the Latin attenuare, to make thin, and carries that sense of reduction across most uses.
In brewing, attenuation is the active process by which yeast ferments sugars and converts them to alcohol and carbon dioxide. A wort, the sugar-rich liquid extracted from grain, enters the fermenter at a certain gravity, or density. As yeast works, it consumes fermentable sugars, and the liquid becomes less dense. The final gravity is lower than the original gravity. Brewers measure this as apparent attenuation, expressed as a percentage of sugars consumed. A beer with high attenuation will be drier and more alcoholic; low attenuation leaves residual sweetness.
The metaphor is literal: the beer really does become thinner, less dense, as sugar molecules are broken down and converted. What weakens the density, however, is fermentation itself, not degradation or damage. The yeast is doing its work perfectly when gravity falls. In this sense, brewing reclaimed an old word and gave it precise technical meaning: attenuation is not a defect but the goal.
Different yeast strains attenuate to different degrees. Some yeasts are aggressive, fermenting nearly all available sugars and leaving an apparent attenuation of 75 to 80 percent or higher. Others are sluggish or selective, stopping at 60 to 70 percent. Brewers choose yeast partly on attenuation profile, balancing alcohol content and mouthfeel. Temperature, wort composition, and oxygen availability also affect how completely a yeast will attenuate a beer.
