Haze: From Sky to Fermentation Tank

In the brewery, haze is not atmospheric moisture but unwanted particles suspended in finished beer or wine.

To most people, haze means a thin veil of dust, smoke or moisture hanging in the air, reducing visibility and creating that murky quality you see on humid summer days. In fermentation and beverage production, haze means something entirely different: a cloudiness or turbidity in liquid caused by suspended particles or compounds that refuse to settle out.

A brewer or winemaker measures haze as a defect. It appears as visible cloudiness in a finished product that should be clear and bright. The particles causing it might be yeast cells that did not fully sediment, tannins that have bonded with proteins and precipitated incompletely, or colloidal material that passes through standard filtration. Haze can develop during storage as these particles slowly form aggregates, or it can be present immediately after clarification if the separation process fails. Breweries measure haze in nephelometric turbidity units, or NTU, using instruments that shine light through the liquid and quantify how much scatters back.

The metaphorical bridge between atmospheric haze and liquid haze is opacity itself. Both involve particles suspended in a medium, obscuring what lies beyond. Both reduce clarity. But where atmospheric haze drifts and changes, haze in beverages is static and permanent once it forms. It signals a failure of clarification, not a passing weather condition.

Different fermented products tolerate different levels of haze. A clean, bright lager beer might permit only 0.5 to 2 NTU. Craft beers or fruit wines may allow more visible particles as part of their aesthetic. The cause matters too: a haze from beneficial yeast strain characteristics reads differently than a haze from metal chill or oxidative degradation. Brewers and winemakers combat haze through cold crashing (chilling to precipitate compounds), fining agents like isinglass or pectinase, filtration, or blending. The choice depends on whether the haze reflects a process problem or an inevitable byproduct of the fermentation style itself.
