attenuative: yeast that ferments sugar down to near-zero

An attenuative yeast is one that ferments wort or must to a low residual sugar content, typically below 1% by weight. Where a non-attenuative strain might leave 5-10% unfermented sugars in the finished product, an attenuative yeast converts 80-95% of the fermentable sugars into alcohol and carbon dioxide. This matters because residual sugar directly affects the perceived sweetness, body, and shelf stability of beer, wine, and other fermented beverages.

The ability to attenuate depends on the yeast's ability to metabolise specific sugars and tolerate rising alcohol levels. Saccharomyces cerevisiae strains vary widely: ale yeasts used in British ales may attenuate 70-80%, while lager strains and many wine yeasts attenuate 85-95%. Hybrid yeasts and some wild strains (Brettanomyces, for example) can push even higher, consuming sugars that standard baker's or brewer's yeast cannot break down, though this requires extended fermentation time.

Practical implications in the brewery and winery

Brewers and winemakers choose attenuative strains deliberately to control dryness. Attenuation is measured as the percentage drop in gravity from original to final gravity. A beer with original gravity 1.050 and final gravity 1.010 has attenuated 80%. High-attenuative yeasts are favoured for dry beers, ciders, and table wines; low-attenuative strains are selected for sweet ales, dessert wines, and products where body and residual sweetness are desired. Temperature, pH, aeration, and nutrient availability all affect how fully a given strain will attenuate in practice, so the same yeast may behave differently across different batches or production stages.

The term itself comes from the Latin attenuare, meaning to thin or reduce. In fermentation, attenuation literally thins the wort by converting dense sugar molecules into thinner alcohol and gas. Brewers sometimes use the phrase apparent attenuation to distinguish the drop in gravity (which includes the effects of alcohol's lower density) from real attenuation, which accounts for the actual percentage of sugar consumed.
