Any live yeast used in brewing or yeast obtained as a by-product of brewing, dried and killed, and used as nutritional yeast.

Brewer's yeast is Saccharomyces cerevisiae, a single-celled fungus that converts sugars into alcohol and carbon dioxide during fermentation. In active brewing, it settles at the bottom of the vessel (in ale yeasts) or floats to the top (in lager yeasts), consuming wort sugars over 5 to 14 days depending on temperature and strain. The same organism, when harvested after fermentation, killed by heat, and dried, becomes a shelf-stable nutritional supplement rich in B vitamins, chromium, and protein.

In the brewery, yeast performance hinges on purity, viability, and strain characteristics. A single pitch of liquid yeast culture or dried yeast granules at 10 to 15 million cells per millilitre will ferment a typical batch. Brewers reuse yeast through multiple generations, rinsing and storing it at 4 degrees Celsius between brews; contamination with wild bacteria or unwanted molds ruins entire runs. Different strains produce distinct flavor profiles: some emphasize fruity esters, others are clean and neutral. Flocculation, the yeast's tendency to clump and settle, determines clarity and harvesting ease.

The byproduct stream is substantial. A brewery producing 1,000 barrels per month generates tons of wet yeast slurry from tank bottoms. Rather than discard this, producers separate, concentrate, and spray-dry it into powder. Dried brewer's yeast contains roughly 50 percent protein, significant B-complex vitamins, and selenium, making it valuable in animal feed and human supplements. The taste is bitter and earthy, unsuitable for palate-sensitive applications.

Variants and common problems

Liquid yeast cultures, sold in smack-packs or vials, remain viable for weeks and allow precise strain selection. Dried yeast survives years if kept cool and dry but loses viability more slowly than liquid; many homebrewers and smaller operations favor dried strains for reliability. Stuck fermentation, where yeast dies or stalls before sugar is consumed, results from low temperature, nutrient depletion, high gravity wort, or excessive alcohol accumulation. Infection by Acetobacter or Lactobacillus introduces vinegar or lactic acid flavors that cannot be removed.

The term 'brewer's yeast' conflates two distinct products: the living organism used in fermentation, and the inert dried residue sold as a supplement. Industrial breweries and supplement manufacturers treat these as separate commodities. The name simply reflects origin and historical use; it carries no formal taxonomic weight, since S. cerevisiae is employed across distilling, winemaking, and baking as well. Understanding whether 'brewer's yeast' refers to active culture or dead powder is essential in procurement and quality control.
