A keelfat is a large, shallow vat used in breweries to cool wort from boiling temperature down to fermentation temperature. The name comes from the Dutch kuelkuip, a vessel designed to maximize surface area so that heat radiates away efficiently. In practice, it is a rectangular tank, typically made of stainless steel or historically of copper or wood, with sides just deep enough to hold the liquid without requiring excessive footprint.

The cooling process relies on time and contact with ambient air. Hot wort from the kettle is transferred into the keelfat, where its large surface area allows the liquid to shed heat to the surrounding environment. In medieval and early modern breweries, the keelfat was often positioned to catch the breeze or located in a cool room. Modern installations may incorporate cold water jackets or even immersion chillers, but the keelfat itself remains the holding vessel while cooling occurs, not an active cooling device.

A keelfat differs from a kettle in both form and function. A kettle is designed to generate heat under the liquid; a keelfat is designed to lose heat from the liquid. The shallow geometry, wide opening, and stationary placement all support passive cooling rather than active heating or vigorous boiling. Temperature control matters here: wort must cool to roughly 15 to 25 degrees Celsius before yeast can safely pitch without dying from thermal shock.

In traditional brewery layouts, the keelfat sits between the kettle and the fermenting vessel, often elevated or positioned so that cooled wort can be gravity-fed into fermenters below. Brewers must manage oxidation risk during cooling, as wort absorbs oxygen readily when splashed or stirred vigorously into the keelfat. The vessel itself requires thorough cleaning between batches because residue from prior brews can contaminate fresh wort and spoil flavor.

The term keelfat remains in use among brewers in northern Europe and among English-language brewers who study brewing history, but it is less common in North American craft brewing, where similar cooling is often done in separate heat exchangers or by immersion chillers fitted directly into kettles. Nonetheless, the basic principle remains unchanged: wort must cool in a dedicated vessel before fermentation can begin.
