Lautering is the separation stage in beer brewing where hot water percolates through a bed of mashed grain, dissolving sugars and other soluble compounds into the liquid wort while leaving spent grain solids behind. The process typically follows mashing, where crushed malted grain has been soaked in hot water to convert starches into fermentable sugars. Without effective lautering, the brewer would have an opaque slurry rather than clear liquid ready for boiling.

The grain bed itself acts as a filter. As hot water (around 65 to 78 degrees Celsius) flows through the compacted mash, the grain husks trap fine particles and proteins while allowing dissolved sugars, minerals, and other compounds to pass through. The clarity of the wort improves as lautering progresses; the first runnings emerge turbid and become progressively clearer. This self-clarifying property is why grain husks are valuable enough that many brewers crush malt carefully to preserve them rather than pulverize them to powder.

Two main methods dominate modern brewing: batch sparging and fly sparging. Batch sparging involves adding hot water in stages, letting it drain completely between additions, then collecting the runoff. Fly sparging continuously sprays hot water across the grain bed surface while simultaneously drawing wort from the bottom, requiring precise flow control to prevent compaction and channeling (where water finds paths of least resistance through the grain). Smaller operations often favor batch sparging for simplicity; larger breweries typically use fly sparging because it extracts more sugar from the grain, improving efficiency.

Equipment and complications

The lautering vessel is typically a kettle or tun with a false bottom, a perforated plate sitting above the true bottom that supports the grain bed while allowing liquid to drain. The grain bed can bridge or compact during runoff, blocking flow entirely or creating channels where water bypasses grain rather than filtering through it. Flow rate matters critically: too fast and extraction is poor; too slow and the grain bed settles and compacts under its own weight, further restricting flow. Professional brewers monitor run-off rates carefully, typically aiming for completion within 90 minutes.

The term derives from the German word "lauter," meaning to clarify or purify. German brewing traditions established many techniques that English-language brewers adopted wholesale. The lautering step distinguishes batch-based grain brewing from simpler extract brewing, where malt sugars come already dissolved. Understanding lautering is essential to controlling beer color, body, and fermentability, since the composition of collected wort directly affects how yeast will perform and what flavors the final beer will display.
