The process of slowly churning milled oil crops such as olives, allowing droplets of oil to aggregate for more effective separation.

Malaxation is the controlled heating and gentle stirring of crushed olive paste (or other milled oil crops) in the minutes after milling. The process allows tiny dispersed oil droplets to combine into larger pools, making them easier to separate from the solid and water phases. Without malaxation, much of the oil remains trapped within the paste matrix and is lost during pressing or centrifugal separation.

The malaxer itself is a tank fitted with a slow-turning paddle or screw, typically rotating at 10 to 40 rpm. Temperature is raised gradually, usually to between 25 and 32 degrees Celsius in cold-pressing operations, or up to 45 degrees Celsius in conventional pressing. The residence time ranges from 15 to 45 minutes depending on olive variety, ripeness, and desired oil quality. Longer malaxation generally improves oil yield but can degrade flavor compounds and produce inferior sensory results in premium cold-pressed oils.

The word derives from the Latin malaxare, meaning to soften or knead. The term appears in classical texts on oil production and has remained standard in Mediterranean olive mills for centuries. It is sometimes called conditioning in English-language technical literature, though this term is less precise in industrial usage.

Yield improvement is dramatic: a well-designed malaxation stage can recover 1 to 3 percent additional oil compared to direct pressing without stirring. This gain diminishes with overmalaxation, as prolonged mixing oxidizes the paste and breaks emulsions that had begun to form. The relationship between malaxation parameters and final oil composition makes this step critical in defining whether an operation will produce refined commodity oil or retain the polyphenol content and varietal character needed for protected designation of origin (PDO) products.

Modern mills often employ temperature control and progressive paddle designs that minimize foam and aeration. Some producers bypass malaxation entirely for certain cultivars, accepting lower mechanical yield to preserve volatile compounds valued in early-harvest oils. The choice reflects the economic trade-off between extracting maximum volume and maintaining flavor integrity.
