oberhefe: ale yeast that rises to the top
Oberhefe is a strain of brewing yeast, Saccharomyces cerevisiae, that ferments at warm temperatures (typically 15 to 25 degrees Celsius) and naturally rises to the surface of the wort during active fermentation. The name comes from German: "ober" means upper or top, and "hefe" means yeast. This behavior contrasts sharply with lager yeasts, which sink and work at the bottom of the vessel in cold fermentation.
Breweries that use oberhefe collect it from the surface of the fermenting vessel, usually after 5 to 7 days of active fermentation when a thick, tan or cream-colored head has accumulated. This yeast is then either pitched directly into the next batch, cropped and stored for several generations, or sold to other breweries. The strain produces distinctive fruity and spicy esters at warmer fermentation temperatures, characteristics prized in ales, stouts, and traditional British and Belgian beers.
The key advantage of oberhefe is ease of harvest: a simple skimming or pumping operation removes the yeast from the top without disturbing the bulk of the beer below. This made it the dominant brewing yeast in Britain and continental Europe before refrigeration became standard. Breweries could maintain yeast banks by cycling the same strain through multiple fermentations over weeks or months.
Practical challenges and variants
Oberhefe requires active management to remain viable and pure. Left in storage at room temperature, the strain loses vigor and may become contaminated with wild yeasts or bacteria within days. Modern breweries typically store it in glycerol at cold temperatures or maintain liquid cultures. Some producers use dried oberhefe preparations, though these have lower cell viability than fresh or frozen stock. Flocculation rates vary between strains: some settle quickly after fermentation ends, others remain suspended and require extra clarification time.
The distinction between oberhefe and lager yeast remains fundamental to brewing classification. A beer fermented with oberhefe is, by definition, an ale, regardless of flavor or color. Industrial breweries still use oberhefe strains for ales, especially in regions with strong ale-brewing traditions, though many have switched to pure cultures propagated in laboratories rather than house yeasts harvested from the fermenter.
