An olla is an unglazed earthenware vessel, typically spherical or bulbous with a narrow neck, sunk into soil to deliver water directly to plant roots. Water seeps slowly through the porous clay walls, providing steady irrigation over days or weeks without surface evaporation loss. The pot is filled from above through its opening, then capped or left to weep gradually as the surrounding soil dries and pulls moisture through the clay.
Traditional ollas measure 8 to 12 inches in diameter and are hand-thrown from low-fire earthenware that remains porous even after firing. The clay body typically contains 15 to 25 percent sand or grit to prevent excessive shrinkage and cracking. Larger variants, used in vineyards and orchards, can reach 18 inches across. The neck is usually pinched or left open to a diameter of 1.5 to 2 inches, wide enough to pour water but narrow enough to minimize evaporation and debris entry.
The method works because unglazed clay is hygroscopic: as soil adjacent to the buried pot dries below the water potential of the clay, water molecules are drawn through the porous structure into the soil. Refilling frequency depends on soil type, temperature, and plant water demand. In sandy soil, ollas may need filling every 5 to 10 days; in clay soil, every 14 to 21 days. The system is passive, requires no moving parts, and cannot clog with mineral salts the way drip systems do, though calcium deposits can eventually reduce permeability over seasons.
Practical use and limitations
Ollas suit perennial plantings and vegetables in arid or semi-arid climates where water is costly or scarce. They are buried near plant stems, typically 6 to 12 inches deep, so roots encounter moist soil without waterlogging. They work poorly in heavy clay that stays wet or in freezing climates where repeated freeze-thaw cycles shatter the clay. Rodents may damage the clay or nest nearby; burying the pot deeper helps. In humid regions, the slow seepage rate can lead to fungal issues if soil stays perpetually wet.
The term comes from Spanish and Arabic sources in medieval Iberian agriculture. Ollas remain in use in Mexico, the southwestern United States, parts of North Africa, and the Middle East, where they predate modern irrigation technology and are still preferred where water conservation or electricity availability is a constraint. Contemporary earthenware ollas are manufactured in Mexico, Spain, and parts of India, though the technology is simple enough for local potters to produce.
