A type of yeast traditionally used in winemaking, baking, and brewing, now identified as Saccharomyces cerevisiae.

ragi: the workhorse yeast of fermentation

Ragi is a commercial yeast strain, formally identified as Saccharomyces cerevisiae, that ferments sugars into alcohol and carbon dioxide. It has been used for millennia in winemaking, brewing, and baking across Asia, the Middle East, and parts of Europe. The organism lives in a dormant state until rehydrated and pitched into a sugar-rich medium, at which point it multiplies and metabolises available carbohydrates. A single gram of active dry ragi can contain billions of viable cells.

In winemaking, ragi works at temperatures between 15 and 25 degrees Celsius and typically completes fermentation in 7 to 21 days depending on sugar concentration and strain vigor. Different strains produce different flavour compounds and residual sweetness profiles, so winemakers choose specific varieties for specific conditions. In brewing, ragi is pitched into wort at higher cell densities and often tolerates alcohol levels up to 12 percent ABV or higher in select strains. Bakers use ragi for its ability to produce gas rapidly and consistently, cutting bulk fermentation time to 3 to 6 hours.

The commercial forms of ragi are dried (moisture content around 5 to 8 percent), compressed cake (around 70 percent moisture), or liquid suspension. Dried forms store longest at cool temperatures; cake yeast requires refrigeration and shorter shelf life. All forms must be handled carefully to avoid contamination, which can introduce wild yeasts or bacteria that spoil the product. Temperature shock during rehydration can kill cells, so protocol calls for gentle warming in small volumes of water before bulk addition.

Variants and performance trade-offs

Wine yeasts within the ragi group vary in alcohol tolerance, nitrogen demand, and flocculation rate (how quickly they settle). Ale yeasts ferment cooler and produce fruity esters; lager variants work below 15 degrees Celsius and produce cleaner profiles. Baking strains are selected for fast gas production and ability to tolerate acidic doughs. Brewing strains differ in their sensitivity to pressure and their ability to reuse over multiple generations. An ale yeast may drop cleanly after ten generations; a lager may do so only after three, adding cost per brew.

Quality failures stem from improper storage, contamination during manufacture, underpitching (too few cells for the task), and incompatibility with the medium's pH, salinity, or nutrient profile. Dead yeast does not ferment; wild yeast or bacteria competing in the same vessel produces off-flavours and turbidity. The term ragi itself comes from traditional fermentation cultures in South and Southeast Asia, where mixed microbial communities were historically used; modern commercial ragi is single-strain and pure, a product of 20th-century microbiological isolation and propagation.
