Trub is the accumulated sediment layer that collects at the bottom of a fermenter once yeast has finished the primary fermentation cycle. It consists of dead yeast cells, proteins, hop residues, and other insoluble compounds that precipitate out of solution as fermentation progresses and temperature drops. In a typical fermenter, trub builds up over days or weeks depending on yeast strain, recipe, and fermentation temperature, forming a compact layer that can reach several inches thick in larger vessels.

The composition of trub varies by brewing style and ingredients. Cold break material, coagulated proteins from the boil, settles quickly and forms the base layer. Dead yeast cells, called lees, accumulate throughout fermentation as yeast reproduces, consumes sugars, and eventually becomes flocculent. Hop material and tannins contribute to the bulk, along with calcium oxalate crystals and other mineral precipitates. The density and compactness of trub depends partly on yeast strain; highly flocculant yeasts produce denser, faster-settling trub than powdery strains.

Most breweries remove trub before transferring the finished liquid to secondary fermentation, storage, or packaging. Racking off the trub, using a siphon or valve at the bottom of the fermenter, separates clear liquid from settled solids. Some brewers leave a thin layer undisturbed to protect the beer from oxidation; others vacuum or flush the trub to minimize contact time with the liquid above. The timing of removal affects final flavor, as prolonged contact can introduce off-flavors and bitterness.

Trub disposal depends on scale and local regulation. Home and small-scale operations typically compost or discard it. Some commercial breweries recycle spent yeast and trub as animal feed or fertilizer; others treat it as waste requiring proper disposal. The material has low nutrient density after fermentation has depleted sugars, limiting its agricultural value compared to fresh brewery grain.

The term likely derives from the murky appearance of the sediment layer, though its exact etymology in brewing is unclear. Understanding trub composition and behavior is essential for brewers seeking clarity, shelf stability, and consistent flavor; excessive trub contact can promote haze formation and reduce product shelf life.
