Unterhefe is a strain of brewers' yeast, Saccharomyces pastorianus, that settles to the bottom of the fermentation vessel during beer production. Unlike top-fermenting ale yeasts, unterhefe works slowly and cleanly at temperatures between 8 and 14 degrees Celsius, producing the crisp, clean character typical of lager beers. The yeast remains largely dormant and compact at the vessel floor until brewers deliberately harvest and pitch it for the next batch.
The name comes directly from German: unter meaning under or bottom, and hefe meaning yeast. It is the standard yeast in continental European brewing tradition, particularly in Bavaria, Bohemia, and Scandinavia, where cold cellaring made bottom fermentation the natural method long before temperature control existed. The yeast likely arose from a hybrid between S. cerevisiae and a wild cold-adapted species, though its exact origins remain debated among brewing scientists.
Brewers using unterhefe must manage fermentation temperature carefully. Warmer conditions accelerate the process but risk off-flavors; temperatures below 6 degrees Celsius slow fermentation to a halt. A typical lager fermentation takes two to three weeks at proper temperature, compared to one week or less for ale yeasts. After fermentation ends, brewers either harvest the yeast layer from the bottom (which can be reused for dozens of generations if kept clean) or allow it to remain as the beer conditions in cold storage.
Variants and practical handling
Different unterhefe strains produce distinct flavor profiles. Munich strains tend toward fruity esters; Bavarian strains toward mineral and bread notes; Scandinavian strains toward very clean fermentation with minimal flavor contribution. Commercial breweries maintain pure cultures in laboratories or purchase dried or liquid yeast from suppliers. Small brewers and homebrewers often exchange slurries directly between batches, risking contamination but preserving local strain character.The main risks with unterhefe are infection and autolysis. Bacterial contamination spreads slowly at cold temperatures but may go unnoticed until the beer tastes sour or vinegary weeks later. If yeast sits undisturbed on the bottom for too long after fermentation ends, dead cells break down and release off-flavors, a fault called autolysis. Brewers therefore either harvest yeast promptly or keep fermentation temperature just cold enough to preserve viability without promoting decay.
Unterhefe remains the default yeast type for lagers worldwide, from mass-market pilsners to craft interpretations. Its predictable, restrained fermentation makes it reliable for larger production runs where consistency matters. The distinction between unterhefe and obergaeriges Hefe (top yeast) marks one of the deepest divides in brewing tradition and flavor profile.
