Yeast-bitten describes a fault in beer where foam that has risen during fermentation collapses and sinks back into the liquid, introducing unwanted yeast cells and organic matter that degrade the final product. This happens when fermentation conditions are mismanaged, allowing vigorous yeast action to overflow and then recede, leaving behind contamination that affects both flavor and clarity.

The defect occurs most often in open-vessel fermentation, where a brewer fails to leave adequate headspace or does not skim the foam regularly. As yeast cells and proteins coagulate at the surface, they form a thick head called the krausen. If this collapses inward rather than being removed, it carries spent yeast, hop resins, and break material back into the beer body. The problem is especially common in warmer fermentation temperatures above 20 degrees Celsius, where yeast activity is more aggressive.

Preventing and detecting the fault

Modern breweries minimize yeast-bitten beer through controlled fermentation temperature, proper vessel sizing to allow foam rise without overflow, and scheduled skimming of the krausen during the first 24 to 72 hours of active fermentation. Closed fermentation vessels with blow-off tubes direct excess foam away rather than allowing it to re-enter. A yeast-bitten beer shows haze, off-flavors described as yeasty or sulfurous, and reduced shelf life due to live yeast continuing to metabolize sugars.

The term reflects the trade's long history with open fermentation. Before refrigeration and sealed tanks, brewers judged fermentation health partly by monitoring the krausen and removing it by hand or with shallow skimmers. A beer where the foam had visibly returned into the body bore the physical evidence of careless work, hence the name: the yeast had bitten back into what should have been a clean product.

In modern ale production, yeast-bitten is now a preventable defect rather than an accepted risk. Lager brewers encounter it less frequently because cold fermentation produces a gentler, slower rise. However, any brewery using high-gravity worts or ambient fermentation without temperature control remains vulnerable. Quality control tests for live yeast count in finished beer can confirm the fault before packaging.
