Bisque: pottery fired once, before the glaze

Bisque is ceramic ware that has been fired once, at temperatures between 1000 and 1200 degrees Celsius, but has not yet received its final glaze coating. The term comes from the French biscuit, meaning twice-baked, though modern bisque actually involves fewer firings than historical practice. After this first firing, the clay body becomes porous, hard, and stable enough to handle, yet still absorbent enough to accept glazes that would run off a fully vitrified surface.

The bisque firing transforms raw clay into a durable intermediate form. The ware shrinks by roughly 10 to 15 percent and loses all chemically bound water. Kiln temperatures must rise slowly to avoid cracking, especially in the range from 400 to 700 degrees Celsius where water vapor escapes rapidly. Once bisque, the pieces can be stacked closely in the kiln without sticking together, which allows efficient use of firing space in the second, or glaze, firing.

Bisque handling and defects

Bisque ware is fragile and prone to chipping because the fired body lacks the glass-like surface of glazed or fully vitrified ceramics. The porous surface collects dust and oils from handling, which can compromise glaze adhesion if not cleaned before glazing. Industrial producers typically brush or dip bisque in plain water before applying glaze, both to clean the surface and to control how quickly the porous bisque absorbs water from the glaze suspension, which affects glaze thickness and color.

Bisque firing reveals defects that were invisible in the raw clay: cracks from uneven drying, bloating from impurities in the clay body, and warping from uneven heating. Pieces that fail bisque inspection cannot easily be repaired and are typically discarded. Overfiring bisque hardens the clay excessively and closes the pores, making the ware difficult to glaze; underfiring leaves it too soft and prone to water absorption that causes problems later.

In industrial tableware production, bisque firing occurs in batch kilns or tunnel kilns that move ware continuously through heating, holding, and cooling zones over 12 to 48 hours. The economics depend on fuel efficiency and throughput, so kiln design and stacking methods are critical. Some producers use a third firing at even lower temperatures to harden dried glaze before the final gloss firing, though true bisque firing always precedes the glaze application step.
