A flighter is a horizontal vane or blade assembly that rotates on a central shaft suspended over a cooler vessel. In breweries, it sweeps across the surface of hot wort (the liquid extracted from the mashing process) to create a circular current that accelerates cooling and ensures even temperature distribution across the batch. The device sits at the top of a shallow, open cooler, typically a rectangular or circular tank, and runs at low speed, usually 10 to 20 revolutions per minute.

The flighter works by gentle agitation rather than vigorous stirring. As the blade rotates, it pushes hot wort toward the edges of the cooler while drawing cooler liquid from the perimeter back toward the center. This circulation pattern breaks up temperature gradients that would otherwise form, where the top surface cools faster than the bulk liquid below. Without a flighter, the wort would cool unevenly, potentially creating stratified layers that extend cooling time and compromise the precision timing critical to yeast pitching and fermentation control.

Most flighters consist of a single flat or slightly curved blade, typically made of stainless steel, mounted perpendicular to a vertical shaft. The blade may be 3 to 6 meters long on industrial coolers, spanning nearly the full width of the vessel. The shaft is driven by a simple electric motor through a gearbox or belt drive. Some coolers use multiple shorter blades stacked at different heights, though the single-blade design dominates because it minimizes power draw and avoids unnecessary turbulence that can introduce unwanted aeration or oxidation in the cooling wort.

The flighter is distinct from a chiller or heat exchanger: it does not actively remove heat but rather redistributes the heat already present and relies on passive cooling through the vessel's large surface area and convection with the surrounding air. This makes it most effective in breweries where cooling time is not the limiting factor, or as a secondary aid to other cooling methods. In modern brewing, flighters are often paired with plate coolers or immersion coils that do the heavy lifting of heat removal.

Common problems include bearing wear from the rotating shaft, blade damage from scale or foreign objects, and motor overload if the wort becomes too thick or viscous. Flighters also collect foam and trub (protein and hop solids) along their edges, so they must be designed for easy cleaning and are often left stationary until the wort has partially cooled and settled.
