A granary is a structure or container designed to store grain at moisture levels safe from mold, insects, and rodents. The basic job is simple: keep harvested cereal crops (wheat, barley, corn, oats, rice) in good condition for weeks or months until they are sold, milled, or fed to livestock. Without proper storage, grain loses market value rapidly through spoilage, pest damage, or moisture absorption.

Granaries come in two main types. Farm granaries are small, often wooden or steel bins holding 200 to 2,000 bushels, positioned near the field or barn. Commercial elevators are massive installations with thousands of tons of storage in vertical steel or concrete silos, serving as regional collection and distribution hubs. Both types must control three enemies: water (which triggers germination and fungal growth), insects (particularly weevils and moths), and rodents. A well-kept granary maintains grain moisture below 14 percent and uses screening, traps, or fumigation to stay pest-free.

Grain stored above safe moisture levels sweats from internal condensation, creating pockets of rot that can spread through an entire bin within weeks. Most farm granaries sit on raised floors with ventilation gaps to allow air circulation beneath the grain mass. Larger facilities use mechanical aeration systems: fans draw air up through ducts in the floor, cooling the grain and evaporating excess moisture. Grain also compacts under its own weight over time, and bridging (where grain forms an arch and stops flowing) is a common headache when emptying.

Metal drum or hopper bins, often portable, hold grain temporarily during harvest or transport. Concrete bunkers offer superior pest control and longevity but cost more and cannot be emptied quickly. The term granary originally meant a room in a house or manor where grain was stored as a wealth reserve, but industrial agriculture shifted the meaning to purpose-built agricultural facilities.

Stored grain naturally loses weight and quality over time through respiration (the grain is still alive, consuming its own starches), insect feeding, and mold. Losses of 2 to 5 percent annually are normal in temperate climates; tropical granaries can lose 10 to 15 percent if not actively managed. This loss is a serious cost for cooperatives and exporters, and explains why grain stored longer than one season requires regular inspection and sometimes chemical treatment.
