uncapping: removing the wax seal from capped honey
Uncapping is the removal of the thin wax cappings that cover sealed cells in a honeycomb frame. Honey bees seal ripe honey with these cappings, secreted from glands on their abdomens, to protect the honey from moisture and fermentation. A frame of capped honey is ready for harvest; uncapping exposes it so the extractor can spin it out of the comb.
The wax cappings themselves are valuable: they are collected during uncapping and rendered separately into beeswax for candles, cosmetics, and wood polish. Uncapped honey drains faster and more completely during extraction, and the recovered wax can represent 1 to 2 pounds per full-depth frame in a strong hive. Beekeepers therefore see uncapping as both a necessary step and a byproduct worth preserving.
Small-scale beekeepers uncap by hand, using a heated stainless steel knife or a specialized uncapping fork, which has sharp tines that shave wax from the frame surface without cutting into the comb itself. Commercial apiaries use powered uncappers: these consist of a heated spiral blade, a roller, or a chain-driven belt that removes cappings as frames move through at controlled speed. The heated tool is essential because wax adheres firmly at room temperature but becomes plastic above 40 degrees Celsius.
The uncapped wax falls into a collection pan or tank beneath the apparatus. This wax is later melted in a solar melter or steam wax extractor to separate it from honey residue. The honey that drains during uncapping, called cappings honey, is thinner and often ferments more readily than regular honey, so it is usually blended back into the main crop or crystallized separately.
Poor uncapping technique causes three problems: crushing the comb beneath the cappings layer and damaging cells, creating ragged surfaces that let honey seep during extraction, or removing too much wax and exposing pupae or brood in the cells below. Uncapping must therefore be precise and swift, which is why modern extracting houses operate uncappers continuously rather than frame-by-frame.
