Whirlpooling is a separation technique used in breweries after the boil, where hot wort (the liquid extracted from mashed grain) is made to spin rapidly in a kettle or vessel, causing suspended solids called trub to settle into a cone at the bottom. The brewer then drains clear wort from a port above the settled material, leaving behind the accumulated protein, hop debris, and grain husks.

The process works because centrifugal force pushes heavier particles outward and downward as the liquid rotates. A typical whirlpool is created by either stirring the wort vigorously with a paddle or mash rake, or by directing the inlet of recirculating wort tangentially into the kettle. In modern breweries, dedicated whirlpool vessels (shallow, wide tanks with a central drain) receive the wort and spin naturally for 15 to 30 minutes while the cone tightens.

Trub is undesirable in finished beer because it contributes bitterness, astringency, and haze. Whirlpooling removes a significant portion, though not all: a secondary settling stage called cold break removal often follows. The method is gentler than centrifugal separation and requires no moving parts in the wort itself, making it reliable and easy to clean.

The term originated from the observable whirlpool pattern created during spinning. Early brewers achieved similar separation by violent stirring and waiting; modern whirlpooling formalized and optimized the principle. Today it is standard practice in craft and industrial breweries, complementing or replacing older methods like hopback filters or lauter-tun settling.

Whirlpooling works best with vigorous boils that generate good protein coagulation; weak boils result in finer, slower-settling particles that escape into the wort. Temperature also matters: wort below 160 degrees Fahrenheit forms a looser cone. Some brewers add whirlpool additions of hops at the start of the spin to extract aroma compounds while trub settles around them.
