blowoff: foam and gas venting during fermentation
A blowoff is the controlled release of carbon dioxide gas and foam that accumulates in a fermentation vessel during active yeast metabolism. In brewing and fermentation work, this occurs when yeast consumes sugars and produces CO2 as a byproduct, creating pressure and foam that must escape to prevent vessel rupture and allow fermentation to proceed smoothly.
The blowoff typically begins 12 to 48 hours after yeast pitching, once fermentation enters its vigorous phase. During this period, CO2 production can be intense. Rather than using an airlock that might become blocked by foam, many producers use a blowoff tube: a length of tubing running from the vessel into a bucket of water or sanitizing solution. The rising gas pushes foam and liquid out the tube into the bucket, while the water trap prevents oxygen and contaminants from entering the vessel.
Material considerations matter here. The tubing must withstand both temperature and mild acid from fermenting liquid. Silicone or food-grade vinyl is standard. The receiving bucket should be large enough to hold excess foam without overflow; fermentation can produce surprising volumes of foam, especially in ale yeasts or high-adjunct recipes.
Blowoff differs from normal airlock use because it tolerates and even expects liquid carryover. A standard airlock would become clogged with foam and fail to vent properly. Once fermentation vigor decreases, typically after 5 to 10 days depending on temperature and yeast strain, the vessel can be switched to a standard airlock for the remainder of fermentation and conditioning.
The practice is common in small-scale and homebrewing operations, where simplicity and safety matter. Large commercial fermenters typically use mechanical foam control systems or CO2 heads designed to handle massive gas volumes. Understanding when a blowoff is appropriate versus when an airlock will suffice prevents both contamination and the mess of overflow.
