A slow alcoholic fermentation process carried out at low temperatures during which the yeast sinks to the bottom of the liquid. Used in brewing lager-type beers.

Bottom fermentation: cold yeast that settles and works slow

Bottom fermentation is a brewing process where yeast cells gradually convert sugars to alcohol and carbon dioxide at temperatures between 7 and 15 degrees Celsius, with the yeast eventually settling as sediment on the vessel floor. This contrasts sharply with top fermentation, where warmer temperatures (15 to 24 degrees Celsius) keep yeast suspended and floating. The distinction is not merely about temperature: the yeast strains themselves are genetically different, with bottom-fermenting strains (typically Saccharomyces pastorianus) showing greater cold tolerance and different flocculation behavior than their top-fermenting cousins.

The process typically takes 2 to 3 weeks or longer, making it substantially slower than top fermentation. During this extended period, the yeast works methodically, producing fewer esters and other flavor compounds that emerge during rapid fermentation. The cool conditions suppress the production of fruity, spicy, or phenolic notes that characterize ales, resulting in the clean, crisp, lager-like character valued in pilsners, dunkel lagers, and pale lagers. The slow pace also allows more complete attenuation, meaning less residual sugar remains in the finished beer.

Practical challenges and control

Breweries using bottom fermentation must maintain strict temperature control throughout fermentation. Temperature swings of even a few degrees can stress the yeast, causing stuck ferments or off-flavor development. Historically, this requirement confined lager production to breweries in cool climates or those with deep lagering cellars; today, glycol-jacketed fermentation vessels and refrigeration systems allow lager production anywhere. The yeast settles gradually over days, and brewers must decide when to harvest the sediment from the bottom, which can be reused for subsequent batches if stored properly at cold temperatures.

The term bottom fermentation derives directly from observable behavior: the yeast visibly sinks to the bottom of the vessel as it becomes less metabolically active and flocculates. This visibility made it an obvious point of distinction in older brewing manuals. The yeast itself can be harvested and repitched, making it a valuable resource, though bottom-fermenting yeast is more difficult to handle and store than top-fermenting strains because of its cold-dependent settling behavior and sensitivity to temperature fluctuations.
