A bolter is a plant that enters its reproductive phase abnormally early, diverting energy into flowering and seed production instead of the edible or harvestable part. In leafy crops like lettuce, spinach, and cabbage, bolting renders the plant bitter, tough, or otherwise unmarketable before the operator intends to cut it. The plant grows taller and more rapidly than normal cultivars because it is following its biological imperative to reproduce, not to accumulate the mass that makes it commercially valuable.
Bolting happens under specific environmental stresses, most commonly temperature. Cool-season crops like lettuce and brassicas bolt when exposed to sustained warmth, especially when day length increases in late spring and early summer. Some varieties are more prone to bolting than others; seed companies breed for bolt resistance in commercial cultivars. Even a cold-hardy lettuce variety may bolt if transplanted too early in the season or if a warm spell triggers the change.
In root crops like radish, carrot, and beet, a bolter produces a seed stalk in its first year rather than storing energy in the root. This is sometimes the result of vernalization, where exposure to cold triggers flowering even in a biennial crop. In onions and garlic, premature bolting (called bolting out) reduces bulb size and causes splitting or cracking of the outer layers.
Detection and loss
Bolters are identified in the field by the rapid appearance of a central flower stalk, often accompanied by tougher foliage and a visible change in plant shape. In leafy greens, bolting can occur within days of the trigger event. Once a plant bolts, it cannot be reversed; the crop must be harvested early at reduced weight or discarded. In a commercial operation, even a small percentage of bolters in a planting can mean selective hand-harvesting or total crop loss if bolting is widespread.The term derives from the notion of a plant bolting or running away from its normal growth pattern, as if fleeing. Growers manage bolting risk through variety selection, planting date timing, shade cloth use in hot climates, and irrigation management to reduce heat stress. In protected cropping (greenhouse or tunnel), temperature control directly reduces bolting pressure, which is one reason such systems command a premium for cool-season crops.
