A clamp is a low, elongated mound of agricultural produce, typically root vegetables like potatoes, turnips, or beets, built directly on the ground for short to medium-term storage without mechanical cooling or purpose-built structures. The heap is then covered with straw, soil, or both to insulate the contents and exclude light and weather. Clamps remain common on farms without access to refrigerated storage, particularly in temperate regions where winter preservation of root crops is essential.

The typical clamp is built 1 to 1.5 meters high and 2 to 4 meters wide, running along a north-south axis to optimize thermal stability. Produce is piled directly onto well-drained ground, sometimes on a base layer of straw. The covering begins with straw (10 to 15 centimeters thick), topped with soil or turf (another 15 to 20 centimeters). Ventilation is provided by leaving a ridge or pyramid of uncovered straw at the crown, or by installing short pipes or bundled straw at intervals along the top to allow condensation and gases to escape.

Temperature inside a well-made clamp stays close to ambient ground temperature, typically between 0 and 5 degrees Celsius in winter. This slow cooling and stable environment suits potatoes, swedes, and parsnips well. Spoilage occurs when water accumulates inside (promoting rot), when covering is damaged by frost heave or rodents, or when internal temperatures rise above 8 degrees Celsius in spring. The heap must be positioned away from standing water and on naturally draining soil.

Variants and regional practice

Pit clamps are dug slightly into the ground rather than built above it, reducing exposure but increasing drainage risk. Silage clamps are similar structures but built with concrete floors and walls to contain liquor, making them semi-permanent structures rather than temporary earthen heaps. The term "clamp" also appears in older literature for coal or mineral storage in similar fashion, though agricultural use is dominant today.

Clamps have declined in frequency as farm size increased and mechanical cold storage became affordable, but remain standard on small holdings, organic farms, and in regions where infrastructure investment remains limited. The technique requires no electricity and minimal capital; failure is predictable and localized rather than catastrophic. For emergency or supplementary storage during harvest gluts, the clamp remains faster and cheaper than building additional sheds.
