Cut and come again is a harvesting method where you remove only the outer leaves from leafy greens, leaving the growing centre intact so the plant produces fresh leaves for multiple harvests. Instead of pulling the entire plant, you take what you need and the crop continues to grow. This works best with loose-leaf varieties like oak leaf, buttercrunch, and cos lettuces, as well as chicory, endive, kale, spinach, and chard.

The mechanism relies on the plant's apical dominance and ability to regenerate. Once you remove outer leaves, the plant redirects energy to developing new foliage from the growing point. A mature lettuce plant can typically yield four to six cuts over eight to twelve weeks, depending on growing conditions, leaf size at harvest, and species. Cooler seasons extend the productive window; heat stress shuts down growth and triggers bolting.

Practical constraints and timing

The method only works if you start cutting after the plant has developed sufficient leaf area, usually four to six true leaves. Harvesting too early weakens the plant; waiting too long means you get coarser, tougher leaves. Leaves are typically ready for a second cut within seven to ten days in warm conditions, but two to three weeks in cooler weather. Each successive flush tends to be slightly slower and sometimes smaller.

Common failures occur when growers cut into the crown or remove the growing point, which kills the plant. Damage from pests, slugs, or disease to the central whorl also halts regrowth. Overwatering after cutting can invite fungal rot in the remaining stem. The method requires clean harvest tools and careful technique to avoid bruising leaves that will remain in the field.

Cut and come again suits market gardens, restaurants, and home growers who need continuous supply over time rather than bulk harvest. It reduces waste, spreads labour, and keeps plants in the ground longer, though it demands more handling time per kilogram than once-over cutting. Commercial field production rarely uses this approach; it is mainly a intensive production method for higher-value or specialty crops destined for premium markets.
