An edible bean is the mature, dried seed of a legume plant, typically harvested from a pod after the plant has flowered and the seed has hardened. Common varieties include kidney beans, pinto beans, black beans, chickpeas, lentils, and split peas. These seeds contain 20 to 30 percent protein by dry weight, making them a primary protein source in agriculture and food processing worldwide. They are stored as dried goods and reconstituted by soaking and cooking before consumption or industrial processing.

Bean crops are grown across climates and soil types, from tropical regions to temperate zones. Major producing nations include India, China, Brazil, and the United States. The plant itself fixes nitrogen in the soil through symbiotic bacteria in root nodules, reducing the need for synthetic fertilizer. This makes bean cultivation valuable in crop rotation and sustainable farming systems. Mechanized harvesting uses combine equipment adapted to handle the mature pod without excessive seed damage.

Processing and Storage Challenges

After harvest, beans must be dried to around 12 percent moisture content to prevent mold and insect infestation during storage. They are cleaned to remove stones, chaff, and foreign material using gravity tables, magnetic separators, and optical sorters. Proper ventilation and temperature control in storage silos prevent moisture reabsorption and pest colonization. Beans can be stored for years if kept cool and dry, making them valuable for food security and long-term supply chains.

Defects during growth and harvest affect quality and marketability. Pod shattering in the field causes seed loss. Splits, cracks, and discoloration from weather exposure or improper handling reduce grade. Insect damage, particularly from bruchid beetles that lay eggs in stored beans, requires monitoring and sometimes fumigation. Moisture and temperature fluctuations during storage cause seed coat checking and sprouting, which compromises appearance and shelf life.

In food manufacturing, beans are used whole in canned products, soups, and ready-to-eat meals; ground into flour for baking and extruded products; or processed into protein concentrates and isolates for plant-based meat alternatives. The starch and fiber content varies significantly by variety, affecting cooking time, texture, and nutritional profile. Industrial-scale bean processing lines handle cleaning, soaking, cooking, and packaging at rates of several tons per hour.
