At this point the kernel contains roughly 70 percent water and has a soft, creamy texture that makes it suitable for fresh consumption, canning, or freezing. Once fully mature, the same maize becomes field corn or dent corn, used for animal feed, ethanol, or industrial starch.
The term "green" refers to the state of ripeness rather than the color of the kernels or husk, though the husks are indeed green at harvest. Timing is critical because the window for optimal quality lasts only a few days. As the ear matures, sugar converts to starch, the kernel wall thickens, and the cob hardens. Commercial sweet corn varieties are bred specifically for green corn production and typically contain higher sugar content than field corn varieties; examples include Silver Queen and Honey and Cream, though varietal names change by region and season.
Green corn is harvested mechanically on large farms using specialized equipment that strips the ears from the stalk and removes husks in a single pass. On smaller operations, hand harvesting remains common. The ears must reach processing or market within hours of harvest to prevent moisture loss and quality degradation. Processors blanch, cut kernels from the cob, and freeze or can the product. Fresh green corn for direct retail sale is cooled immediately and often shipped in ice or refrigerated trucks.
The green corn trade sits between fresh produce and processed food markets. Canneries and freezing facilities compete directly with fresh-market sales, which is why harvest scheduling and variety selection are economic decisions. Some regions grow green corn as a rotation crop before planting field corn in subsequent years. Moisture content, kernel tenderness, and sugar content are the primary quality metrics, and buyers test these through sampling before accepting truckloads.
Common problems include premature silking, which shortens the harvest window, and late maturity in cool seasons, which extends the window but risks oversupply and price collapse. Insects, especially corn earworm and European corn borer, directly damage ears destined for fresh markets because blemished or wormy ears cannot be sold whole. Storage at 0 degrees Celsius maintains quality for weeks, but most green corn enters the processing chain within 48 hours of harvest.
