Green meat refers to fresh, leafy vegetation harvested for livestock feed, typically at early growth stages when nutrient density and digestibility are highest. Common examples include clover, alfalfa, vetches, and various grasses cut and fed fresh or lightly wilted rather than dried into hay. The term appears most frequently in UK and Commonwealth agricultural practice, though the concept is universal wherever livestock graze managed pastures or consume cut fodder.

The value of green meat lies in its water content, soluble carbohydrates, and protein levels. A fresh clover sward cut at boot stage, for example, may contain 20 to 25 percent crude protein on a dry matter basis, compared to 15 to 18 percent once dried and stored. Cattle, sheep, and dairy herds consume green meat more readily than mature hay, and digestibility rates are typically 5 to 10 percentage points higher. This makes green feeding particularly efficient during the growing season when production costs are lowest.

Green meat is delivered fresh or allowed to wilt for 12 to 24 hours before feeding, reducing moisture content slightly and improving palatability without the energy loss of full drying. Cut green feed begins to ferment if left anaerobic in bulk, so rapid consumption or ensiling is necessary. Farmers traditionally used green meat to bridge gaps between late winter hay and spring pasture growth, when housed livestock needed supplementation but stored winter fodder supplies were diminishing.

Management and seasonal role

Productive green meat crops include clovers, lucerne (alfalfa), field beans, and rye grass sown specifically for cutting rather than grazing. Timing of cut matters: too early yields immature growth with high water and lower yield; too late increases fibre content and decreases digestibility. Repeated cuts across a season reduce plant vigour, so management rotations typically allow 4 to 6 week recovery between harvests. Some farms dedicate 5 to 15 percent of arable land to green meat production as a fertility-building break crop.

The distinction between green meat and silage is important: silage is fermented under anaerobic conditions for long-term storage, while green meat is consumed fresh or within days. Green meat does not appear as a line item on modern feeding budgets as extensively as it once did, partly because improved forage conservation and year-round housed feeding systems have reduced seasonal feed gaps. However, organic and lower-input systems still rely on green meat crops for their soil-building and livestock nutrition benefits.
