Underback: the catch vessel below your mash tun
The underback is a large metal vessel positioned directly beneath a mash tun or mashing tub to collect wort as it drains from the grain bed during lautering. In breweries, this is where the first runnings accumulate before being transferred to the kettle for boiling. The vessel must be sized to hold the full volume of wort from a mash, typically ranging from 50 to several hundred gallons depending on brewery scale, and is usually fitted with a valve or tap near the base for controlled discharge.
Traditional underbaks were made of copper or tinned steel; modern ones are stainless steel. The vessel sits on a level surface or on a stand that allows gravity flow out and through, and it must have sufficient headroom clearance below the mash tun's false bottom or lautering screen. Most underbaks include a spigot with a removable collection arm or channel that directs wort into the vessel during run-off, reducing splashing and aeration of the wort before the boil.
In commercial brewery practice, the underback serves a critical step in quality control. It collects wort of varying gravity as the mash is sparged, and brewers often return the first turbid runnings (called vorlauf or recirculation) back through the mash to clarify the wort. This runoff rate and clarity are observable at the underback stage, making it a key monitoring point. The underback also acts as a holding vessel during the lauter process, which may take 60 to 90 minutes or longer, allowing time for equipment adjustment and grain conditioning.
The term comes from its position and function: it sits underneath the mashing tub and backs up, or receives, the liquid that flows down. In smaller or older breweries, the mash tun and underback may be a single integrated unit with a valve system separating them. In larger operations, they are separate vessels with interconnecting hoses or channels that can be swapped out for cleaning and maintenance between brews.
Common problems include inadequate capacity leading to overflow, poor drainage or valve blockage from grain debris, and temperature loss if the wort sits too long in an uninsulated vessel. Many brewers insulate their underbaks or even fit them with heating elements to maintain wort temperature during the lauter cycle, since temperature directly affects extraction efficiency and final gravity.
