Harvest is the coordinated gathering of ripened crops from the field. It marks the interval when grain moisture, seed pod firmness, fruit sugar content, or vegetable size reach commercial specifications. The timing is critical: too early and yield and quality drop; too late and weather loss, shattering, or pest damage becomes severe. For a wheat crop, harvest typically occurs when grain moisture falls to 13 to 15 percent; for soybean, 12 to 13 percent; for corn, 20 to 25 percent depending on drying capacity at storage.

The harvest operation differs radically by crop type and geography. Combines cut and thresh small grains in one pass. Potato harvesters shake soil from tubers on vibrating decks. Sugar beet harvesters lift, top, and load in three stages. Tree fruit harvest ranges from hand picking into baskets to mechanical shakers that dislodge fruit onto catching frames. Forage crops may be cut, wilted, and baled; or chopped directly into wagons. In regions with strong seasons, harvest occurs over two to four weeks; in tropical regions with staggered ripening, it may stretch months.

Labor and equipment capacity define harvest economics. A single combine can cover 50 to 80 hectares per season in wheat, assuming favorable weather and minimal breakdowns. Renting machines during peak weeks is common in areas with smaller farms. Weather interrupts harvest constantly: rainfall delays field access, binds machinery with mud, and raises crop moisture; frost can damage some crops overnight; wind increases grain loss during cutting. Harvest insurance and crop forecasting have become essential to plan labor and custom hire.

Post-harvest handling begins immediately. Grain flows into trucks or wagons and must reach storage bins within hours to prevent spoilage. Moisture management is paramount: wet grain heats rapidly in bulk, promoting mold and losing market grade. Some crops require immediate processing: forage must be ensiled within days; wet sugar beets must go to the factory within 72 hours; some fruit and vegetables must be cooled to 2 to 4 degrees Celsius within hours to arrest respiration and fungal growth.

Harvest timing depends on indicators specific to each crop. Combines have moisture sensors on grain; potato harvesters set shake intensity by soil type; apple orchards monitor sugar levels with refractometers on sample fruit. Weather forecasts now drive harvest scheduling in large operations: a predicted dry window may trigger 16-hour shifts to maximize machine hours. Mechanization has shifted the labor crisis from peak-season hiring toward year-round operator and technician employment.
